Based in the tiny village of Bernouil, just north-east of Chablis, this small family-owned domaine bottle less than 10% of their production so remain relatively unknown. The wines are splendidly typical of the region - crisp and mineral but with an underlying generosity of palate, making them a wonderful yet restrained partner for food. Value such as this is relatively unheard of in Burgundy nowadays.
Domaine Fournillon Cremant de Bourgogne 2020
12% abv
Vol- 75cl
From parcels of Pinot Noir in the communes of Bernouil and Epineuil, the grapes are harvested by hand. This Crémant is made using the Traditional method and is allowed to ma-ture on the lees for over 20 months.
Crémant de Bourgogne is the appellation used to describe the sparkling wines produced in Burgundy, which can be either white or rosé but not red, as these are known as Bourgogne Mousseux. It is made using the same ‘Méthode Traditionelle’ that is used to create the more famous Champagne, however due to the lack of the Champagne brand, Crémant de Bourgogne wines are much cheaper than their A-list cousins, resulting in wines that are comparable in quality to Champagne but far easier on the bank balance.
