Based in the tiny village of Bernouil, just north-east of Chablis, this small family-owned domaine bottle less than 10% of their production so remain relatively unknown. The wines are splendidly typical of the region - crisp and mineral but with an underlying generosity of palate, making them a wonderful yet restrained partner for food. Value such as this is relatively unheard of in Burgundy nowadays.
Domaine Fournillon Chablis 2020
13% abv
Vol- 75cl
This wine is a perfect expression of Chablis. Transport yourself to the Kimmeridgean soils of Chablis and taste the complex mineral character of this wine. We like it with freshly caught fish!
From parcels of vines in the village of Fleys, the majority of the chardonnay grapes are harvested mechanically. The grapes are then transported to the estate where they are sorted and the juice is extracted by a pneumatic press. Alcoholic fermentation is carried out in stainless steel tanks with strict temperature controls. Ageing is then carried out in tank for 12 months before bottling and release.
