The Pozzobon brothers produce around 70,000 bottles from their vineyards, worked by the family from the 1700s. Since purchasing the land outright from the Venetian state - or ‘from under the watchful eye of the Lion of Saint Mark’ as they put it - they have developed a highly respected range of red, white and sparkling wines.
When, in the 1980s, "organic" was not yet a magic word, the Pozzobon brothers decided to throw calendars on certain dates and learn to listen only to the needs of their plants. They were among the very first in the area to drastically reduce the use of chemicals in the vineyard. The long journey they took with great commitment and conviction towards the conversion to organic was crowned in 2012 by obtaining organic certification.
Case Paolin San Carlo 2020
13% abv
Intense ruby red with aromas of preserved red fruits, like raspberry and blackberry; well balanced with spices and vanilla flavours coming from the aging in barrique. Long, fine and harmonious. 60% Cabernet Sauvignon, 20% Merlot, 20% Cabernet Franc.
The vineyard that produces these wine is grown in “San Carlo” at the foot of Montello, producing Cabernet Sauvignon, Cabernet Franc and Merlot. The vineyard has an extremely low yield per stalk and per hectare. Together with the particular exposure to the sun of the land and the harvest that takes place at the time of greatest ripeness.
Malolactic fermentation and refinement take place in French durmast oak barriques (at least 50% from the first passage) for a total 12-14 months. This is followed by assembly in large casks for six months prior to bottling and refinement in the bottle for another six months.
