The Pozzobon brothers produce around 70,000 bottles from their vineyards, worked by the family from the 1700s. Since purchasing the land outright from the Venetian state - or ‘from under the watchful eye of the Lion of Saint Mark’ as they put it - they have developed a highly respected range of red, white and sparkling wines.
When, in the 1980s, "organic" was not yet a magic word, the Pozzobon brothers decided to throw calendars on certain dates and learn to listen only to the needs of their plants. They were among the very first in the area to drastically reduce the use of chemicals in the vineyard. The long journey they took with great commitment and conviction towards the conversion to organic was crowned in 2012 by obtaining organic certification.
Case Paolin Asolo DOCG Prosecco Superiore NV
12.5% abv
Vol- 75cl
Soft, orchard fruits and white flowers carried by a beautifully linear and pinpoint seam of minerality. The mousee is fine and has a rocky density that lives long in the mouth and acts as the balancing foil to the crushed fruit palate.
The Asolo Prosecco Superiore comes from low yielding parcels of vines from the Asolo hills – one of the two top quality designated production zones for Prosecco. Farmed organically, the Glera grapes undergo a partial maceration and are then fermented incredibly slowly to protect the structure and aromatics of the grapes, residual sugar being low at under 7g/l.
