The Pozzobon brothers produce around 70,000 bottles from their vineyards, worked by the family from the 1700s. Since purchasing the land outright from the Venetian state - or ‘from under the watchful eye of the Lion of Saint Mark’ as they put it - they have developed a highly respected range of red, white and sparkling wines.
When, in the 1980s, "organic" was not yet a magic word, the Pozzobon brothers decided to throw calendars on certain dates and learn to listen only to the needs of their plants. They were among the very first in the area to drastically reduce the use of chemicals in the vineyard. The long journey they took with great commitment and conviction towards the conversion to organic was crowned in 2012 by obtaining organic certification.
Case Paolin ‘Col Fondo’ Asolo DOCG Prosecco Superiore NV

This Asolo Prosecco DOCG ‘Col Fondo’ (With Sediment) was born from the desire to rediscover papà Emilio’s old technique in the production of Prosecco. From the selection of the grapes from the estate’s oldest vineyard and the maceration on skins for 18 hours, comes a base wine with strong personality and minerality. Then follows a second fermentation in the bottle in accordance with the traditional method but without disgorgement. The presence of yeast in the bottom of the bottle is indicative of genuineness and healthiness. When it comes to wine tasting COL FONDO is a pure expression of its territory: a nose of flowers, yellow fruit and bread crust with a deep mineral sense in the palate. We recommend gently turning the bottle upside-down 2-3 times before uncorking and embracing its cloudy pleasures. 0 gr/litre residual sugar. Since 2020, Case Paolin have bottled the Col Fondo in accordance with the updated DOCG disciplinaire rules – minimum of 3 atmospheres pressure and with a mushroom cork – so a slight rise in pressure from 2.5 but still a gentle and pure.

The Asolo Prosecco Superiore comes from low yielding parcels of vines from the Asolo hills – one of the two top quality designated production zones for Prosecco. Asolo covers only one sixth the area of Valdobbiadene Conegliano and although it has a potential production of under one fifth of its larger sibling with actual production under 2% by volume.
