After establishing in Dornoch what may be the best whisky bar in Europe (if not the world), Phil and Simon Thompson decided to take their passion for whisky to the next level by building a distillery on the grounds of Dornoch Castle Hotel. Off the back of a successful crowdfunding campaign, Dornoch's first whisky distillery was formed. Based out of an old fire station, Dornoch Distillery is quickly becoming one of Scotland's most exciting distilleries. Inspired by whiskies of a bygone age, where flavour creation meant more than commercial yield, the brothers are experimenting with very long fermentation times (7-10 days) and all cuts from the still are made by nose (and sometimes mouth) rather than thermometers, hydrometers and automated machinery. We've got a couple of years until their spirit is ready to be called whisky so in the meantime the brothers are distilling and selling an incredible Organic Highland Gin and bringing some exceptional single cask whisky from other distilleries to the market as independent bottlers.

285 bottles fully matured in a refill hogshead. Tropical, white stone fruit with a lovely fresh mineral notes on the finish.
Nose: Haribo hearts, violets, peach liqueur, white tea, some linseed oil, meadow herbs and soft wet driftwood.
Palate: Linseed, wax polish, gooseberries, unripe pear, quince. Juniper, golden raisins and balanced acidity.
Finish: Lapsang Souchong, fennel, caraway and drying oak.
