Bodega Sottano is the result of a family tradition that has been enriched and maintained over several generations. The winery essentially strives to unite hard work and new technologies to preserve the gifts of nature and showcase them in their wines. Taking care of every detail ensures the desired outcome. One of the pioneers in the Cuyo region’s viticulture industry was Fioravante Sottano. Arriving from Italy in 1890, he settled in Mendoza. Nowadays, the winery is owned by the fourth generation of his family. Since 1998, his grandson Ricardo Sottano and his great-grandsons Diego, Pablo, and Mauricio have been carrying on his legacy in order to produce premium wines.
Sottano Cabernet Sauvignon 2022
14.5% abv
As much as Mendoza is famed for its Malbec, it is in fact the Cabernet that I think is the star in the range. It is aged for eight months in two- to three-year-old oak and bottled unfiltered, so may throw a light sediment. (Spread this on toast for a hangover cure).
On the nose there is loads of blackcurrant with hints of cherry pie. The palate shows even more Cabernet character blessed with soft tannins and a gentle white chocolate and coffee finish. I was kinda joking about the toast thing…
Grapes are destemmed and crushed with 3 days of cold maceration at 12 °C for 10 days. This fermentation is takes place in stainless steel tanks of 20000 and 5000 litres n with selected yeast . Complete maceration time was 15 days.
