Situated at the top of the picturesque Franschhoek valley with spectacular mountain views, Holden Manz Wine Estate lies nestled amongst a selection of wine farms. This 22 hectare winery can be found between the Franschhoek and Stony Brook rivers and features lovely fertile, dark loam soils, a Mediterranean climate and a state-of-the-art winery. The recent addition of 50 kW of solar panels has significantly reduced energy consumption – a big step in their ongoing commitment to sustainable production practices.
Holden Manz Chardonnay 2019
14.5% abv
The unique combination of Chardonnay grapes from two markedly different cool climate sites, wild fermentation, barrel fermentation and selective batonnage produces a chardonnay with great ageing potential made in the Meursault style at a fraction of the cost.
Lemony gold; bright, sparky nose; nuances of lime, pink grapefruit, yellow peaches, toasted almonds. Elegant flavours of citrus, summer melon, knit with complex acidity provide a long, smooth finish. Verging on full bodied with a creamy mouth feel. Pair with barbequed giant tiger prawns smothered in garlic and lime butter and a char-grilled fennel salad
Produced using grapes from two cool climate sites. One is next to the cool ocean breezes of False Bay and the other high on the slopes of the Simonsberg. The berries are picked in the cool of the early morning then chilled to 5ºC before being whole bunch pressed using the “champagne” cycle. Clarified juice is wild fermented 50% in new 225 litre French oak barrels and 30% in second fill barrels. Batonnage only starts when two thirds of the fermentation is completed. The wine is bottled approximately 12 months after fermentation with around 10% of the wine passing through malolactic fermentation.
