Dense and mysterious, the Occhio di Pernice reveals a complex and enveloping bouquet with aromas of dried plums and dates, propolis, gingerbread, malaga and tobacco. In the mouth it is sweet and spicy and the olfactory notes return, expanding with those of dried apricots and smoked hazelnut with small nuances of Christmas spices. A wine that surprises with every sip for its concentration and depth. The aftertaste persistence is incredibly long.

Literally holy wine, the Vin Santo is a sweet wine deeply rooted in Tuscan tradition. The first references date back to the Renaissance, which is also when the Avignonesi family first came on the scene. To this date the Vin Santo and Occhio di Pernice are produced with the madre (yeast) that has been passed on for generations and provides that ethereal taste. This sweet wine is the result of an exceptionally long ageing process during which over half of this precious liquid evaporates. It has been calculated that with the same amount of grapes used to produce one 375 ml bottle you can produce twenty-four 750 ml bottles of wine!

100% sangiovese. The grapes were harvested by hand in the first half of September, in small crates covered with vine leaves, and immediately laid out on bamboo mats in the appassitoio (drying room), where they remained to dry for several months. After a slow, gentle press the must is transferred in “caratelli” (50-60 liter oak casks) for a slow, natural fermentation with the aid of an indigenous yeast known as “madre”. Aged More than 10 years in “caratelli”.

Founded in 1974, Avignonesi is the leading winery in the Montepulciano area of Tuscany. Its flagship wine, Vino Nobile di Montepulciano, is appreciated by critics and winelovers worldwide and the winery is also renowned worldwide for the unique dessert wines Vin Santo di Montepulciano and Occhio di Pernice.

Avignonesi was purchased in 2009 by Virginie Saverys, who has brought significant changes to the winery. She has worked tirelessly to convert the entire property to organic and biodynamic viticulture, with the clear goal of crafting distinct, genuine wines that fully express the singular characteristics of the Avignonesi terroir. Virginie and the team's strong belief in organic products and homeopathic medicine meant they must introduce sustainable farming mehods, by way of biodynamic principles, and today they are the largest biodynamic winery in Italy.

Today, Avignonesi owns 200 hectares of vineyards spread out over the Montepulciano and Cortona appellations. All of its wines are produced with 100% estate grown grapes. Resident winemaker Matteo Giustiniani and Agronomist Alessio Gorini oversee production, and under Virginie’s guidance, Avignonesi has developed a production philosophy based on balance, elegance, brightness of fruit and a strong sense of place.

What do I pay for delivery?

Orders under £150 are charged an initial £9.95 incl. VAT.

Northern Ireland, Isle of Man, Isles of Scilly.
Orders under £190 are charged an initial £12.00 incl.

All stock bought from Bond will be charged at delivery cost as quoted by the bond. As this varies dependent on the location of the wines and ultimate destination this will be quoted to you at the point of billing for VAT and duty.

And can we change order.

Deliveries are normally between 09.00 and 17.00 Tuesday to Friday and a signature is required on receipt of delivery. (We do not ship on a Friday for Monday delivery unless specifically requested to do so).

A shipping confirmation email will be sent when your order has been processed and shipped. You will be sent a further email and/or text with a delivery time slot and a consignment number along with instructions on how to amend this if required.

If you are out a card is left, with an instruction to call the local depot to re-arrange delivery. Alternatively, you can inform us to “leave safe”, “leave with a neighbour”, “leave in garage” etc. and we will pass this information onto the courier. Please remember that, in accordance with our Terms & Conditions, alcohol will only be left with persons over 18 Years Old.

We use Mailsafe packaging and double walled cardboard boxes for secure shipping of all bottles. Clear labelling marked FRAGILE is applied and all our despatches.
